A year flew by!

It’s official I’m done with my first year of grad school! Can you believe it? I cannot! It seems like just yesterday I was graduating from NYU, Ahh I’m so old! But really it is weird to have been out of college for a full year! Most of my friends have real-people jobs now and a few are even getting or already married!! Um… when did we become grown ups?


This year has been amazing, and I have learned a lot about myself and my future. I have also done things I never thought I would do namely run a half-marathon and be so excited to run another!!!

Day 8 of the 30 day challenge is to think of a time when I was truly content and I have to say that it was these first few months in Denver! I loved meeting the amazing girls I am so close to now, as well as all my other classmates, finding a new passion in running, and actually being invested in school and loving what I was doing! I know lately there have been a few bumps in the road but i can honestly say that I am happy here and Denver is the right place for me to be for now!

And now it is summer and I am so excited! It will be nice to be able to relax, lay in the sun, work on my consulting, start my masters project and just not have to worry about anything until September!!!

Of course the summer starts in the best possible way because my best friend Ally comes in just a few hours!!! I cannot wait!!

Also on a side note today I had my first run since the half!!! I ran 3.75 and walked 1.5… it was nice, especially because it is sunny and warm after 123456789 years of rain! Tan time is a coming

kkk off to showa, vacuum and get the baby jeep washed!!! Then I’m getting ma hair did before getting Als!!! woot woot see ya on the flip side!!!

Cookies galore!


I have one more day of school left!!!!!!!!!!!!!! YAY! And then I am a second year!! Woot Woot!!

So what to talk about first?? Lets start with Day 7 of the 30 Day Challenge!!!

My Zodiac sign is Virgo!

So the first part of today was been a busy busy busy one!

First up: Yoga Scuplt! Today was a great class!  I was pretty bloated and lethargic so I am glad there was someone else to kick my butt!

I showered at yoga, then popped to the SB to get my normal Venti Iced Green Tea, unsweetened ( I am trying to cut out sweeteners) and a perfect oatmeal! I love this oatmeal its so yummy! I had to wait to eat it though because I had a meeting for my master’s project!

My master project starts now!!! Wee it is on injury and how athletes cope with coming back from an injury!

Then class.. and it dragged on today! I could just not get into it!

Then quick errands, phone chat with Ally, and another meeting! It was my goal to swim, but I was so hungry if it was off to Pei Wei for me!! I picked up lettuce wraps, and a salad!

I had the lettuce wraps for lunch and am saving the salad for dinner soon!

I decided to bake first before I cleaned!

Liza is roadtripping to the Vegas, it is our last day of school, and I am seeing the baby bro tomorrow!! Sooo that obviously means I needed to bake!!

On the menu? Chocolate Chip Cheesecake Bars annnnddd Super Chunk Peanut Butter Oatmeal Cookies!!!

The cheesecake bars are sitting on my counter SCREAMING at me! They look soooo good! Jump on over to Jamie’s blog to get the recipe!!!And they were pretty easy to make!!

Now the cookies… BAAHH OMG…. Word’s don’t even describe how much I love these cookies… peanut butter chips, butterscotch chips, dark chocolate chips, coconut, oatmeal…. SO GOOD! The flavors melt together so seemlessly, and they are chewy and soft…. the perfect cookies!!

For the base recipe I used Dorie Greenspan’s Peanut Butter Oatmeal Chocolate Chipsters!

Chunky Peanut Butter and Oatmeal Chocolate Chipsters

From Baking, From My Home to Yours, by Dorie Greenspan

3 cups old fashioned oats
1 cup all purpose flour
1 tsp baking soda
2 tsp ground cinnamon
1/4 tsp freshly ground nutmeg
1/4 tsp salt
2 sticks (8 ounces) unsalted butter, at room temperature
1 cup peanut butter
1 cup sugar
1 cup (packed) light brown sugar
2 large eggs
1 tsp pure vanilla extract
9 ounces bittersweet chocolate, chopped into chunks, or 1 1/2 cups store-bought chocolate chips or chunks (I used chocolate chips)

* I also threw in a bag of peanut butter chips and butterscotch chips, and coconut!

The coconut was a brilliant addition! It is not that powerful taste wise but the texture it added was great!!! Both Liza and I can’t stop eating them!!!

Please so yourself a favor and make these!!!

Also… I got my free shoes today!!! I was the highest fundraiser for my charity in my half marathon a few weeks ago!!! Weee I don’t usually wear Nike, but I am excited to try these out!

30 things about me!!!

It is soooo rainy here!!! BOOO! But there have been thunder storms… so huge perk! I love thunderstorms!

Sooo onto “day six” of the 30 day challenge which is actually way longer than that because I forget! Todays post? 30 things about me!

1. I am a huge creature of habit.. take my lunch for the past few days… pizza bagels! I get into things and just keep going until I move on to the next habit! I also reread books/rewatch tv shows/ and have a rotation of comfort clothes I wear all the time.

2. I have moved eight times! And lived in Illinois and Colorado twice in my life! I have also never lived anywhere for longer than four years!

3. I can’t run in hot weather! Random but I can’t do it! I like 60 degree weather with a bit of cloud.. that is my perfect running conditions

4. My favorite workout by far is spin class! I am actually a spin instructor! I started spinning with my mom in high school during the summers at our beach house! In college I became addicted and last year I became an instructor!

5. I actually started out college as a journalism major… I wanted to be a correspondent in the middle east! Oh how times have changed!

6. I am a history nerd… I took a world war II class in college for fun, and love anything about British History in particular!

7. I have  a ridiculous affinity for nautical clothing…. seriously the amount of navy and white.. and navy/white stripes in my closet is a little bit insane

8. I don’t like hard alcohol… at all.. it tastes awful and burns my throat! I only drink it rarely and never take shots!

9. My favorite band is Blink 182… I just love them

10. I take a ridiculous amount of pictures… it’s absurd

11. Top frozen yogurt flavor is definitely tart.. or pomegranate-raspberry tart from the fro-yo place by me! My topping of choice is chocolate sprinkles and strawbs

12. I love color… like LOVE it! Most of my clothes (the non-nautical themed ones) are mostly pink, green, or purple haha.. and my room is very preppy and colorful!

13. My favorite meal is tacos.. or taco salad… I think they are the ultimate comfort food, warm, meaty, cheesy, with veggies and guac yummmm!

14. That being said my favorite salad is Asian chicken salad.. probably from Pei Wei… but the one at Cheesecake is the bomb.com as well

15. My favorite fruit is strawberries.. and maybe cherries… I love cherries! But I eat strawberries every day without fail!

16. My favorite  international city is Rome

17. My favorite US city is Chicago, and I am hoping to live there again some day!

18. My favorite cookie is a monster cookie! I love all the different flavors and of course any kind of oatmeal cookie is something I enjoy!

19. I love coconut, but hardly ever bake with it because my roommate doesn’t like it!

20. This will be my first summer in two years not nannying in the Hamptons!

21. I still sleep with my stuffed Coca Cola bear, Cokie, that I have had since I was 7.

22. I want to have four kids! True story I have already picked out their names

23. Deep down my deepest wish is to own a bakery some day, like Meryl Streep in It’s Complicated

24. I LOVE to sing and dance… constantly… wherever  I am.. I will break into random musical/dance interludes…mostly in my car/ room/shower/when I’m running/ randomly in the airport if a good song comes on… all the normal places

25. I have never owned a dog, but  I really want one and to name her/him Bailey!

26. I spend waaaayy too much time on Facebook

27. When I was younger I was obsessed with musicals… Oklahoma is my definite favorite… but I love all the Rogers and Hammerstein musicals

28. I don’t have a favorite book or movie… I am weird but I just can’t pick one… so I have like eight favorites of each!

29. The number one place I want to travel is Southeast Asia

30. I want to become more organized! So if you have any tips please let me know!!!

Rollerblading… Take Two


Im bad at this… I keep peacing out for a few days! But yesterday was hectic and I did not want to share just in case Kathleen read it! Why you ask??


My friend Kathleen is getting married on July 9th, and so we threw her a party so she could celebrate with her friends here in Denver!

I had the best time planning this party, it reminds me how much I love planning things!! Kathleen was really surprised and it was a great time for everyone!

The main event of the night was a Bar Golf! This included 6 “holes” or bars that we had to hit par at by ordering certain drinks! The first hole was at my friend Colleen’s and the last hole was a party at our friend Ted’s!

Liza and I made personalized glasses for all the girls!

                                                                          and of course the munchies!!!


The Bride to be and all the girls!! Isn’t Kat the cutest? Since it was a bar golf theme we were all decked out in golf gear! We had a great time doing the different levels and hopping from one happy hour to another! Colleen did a great job picking each bar based on specials!

and then it was time to go to Ted’s! It was great to be able to bring the boys into our celebration!  and of course have a dance party! Oh and some pong… because it’s not a party at Ted’s without pong!

Yea… I love red velvet cupcakes!!! Only… these were quite dry! I don’ understand because I have made this recipe millions of times and they usually rock my socks off… but I’m wondering if it was the altitude? I haven;t made them here yet… hmmm

This morning I woke up early, with no power cord so unable to upload pics and blog until I got to babysit! And I woke up at the time of the sculpt class I was aiming for.. boo! So I allowed myself two blissful hours of watching the OC and relaxing in bed until it was time to go play with Baby H!! We hung out, then he napped and I  watched HP, uploaded pics and ate POPCORN!!! I love popcorn sooo much!

After a fun 3 hours with the little guy it was straight to the park for rollerblading take two!! My amazing friend Taryn is a very talented Ice Skater and rollerblader, and volunteered to teach me!! So we had a nice hour meandering around the park twice! And I only fell a few times with NO scrapes!!! Wooo I am getting better… I just need to learn to do downhills!

After a few more errands it was home finally to my couch to watch Harry Potter on ABC family and do some work!!

For dinner? I went for baked wings (mmmmm) a pizza bagel, and baby bell peppers!!!

Yea I’m so weird/attractive… I also need to get better lighting!!!

Ok off to enjoy HP with Lize! And maybe get froyo… we shall see!

Healthy food makes me a happy girl!

Its Thursday!!!

I cannot WAIT for this weekend!!! Mostly because I am very burned out on stuff aka work… and just want to be done with all of it!!! After this weekend I have FOUR more days of school!!!! YAY!!

So DAY FIVE of the 30 Day Challenge!!

Day Five is have  I ever thought of ending my own life and the answer without any shadow of a doubt is no, never.

Suicide is no joke, and as a future therapist something that I have learned a lot about recently. For me, I have too much hope for the future and what I want for my life to ever think of ending it. However I know that some people who suffer with depression and suicidal ideation it is easier to see death as a get out of jail free card. But it is not a get of jail free card, it leaves behind a tornado of grief for the family and friends of the victim.

If you have ever felt this way or know someone who feels this way, be a support system, get them the help they need and know that things will always get better.

Ok enough of the dark and twisty!

Rainy days, Lazy days

Hello!!! I keep forgetting about the 30 day challenge! So technically I am on day 3, however I already covered alcohol here, and I can say honestly that I don’t do drugs! not my thang!
So day 4 is my views on religion! Hmm well lets see there, I am Catholic, born and raised, and have always been pretty active in church, from being an altar server to teaching sunday school (ok really this was a way to be with friends and miss half of mass when I was in hs), although in college I became more of a “buffet-table” Catholic! I try to go to mass often but I let other things get in the way too often. However I believe that faith isn’t measured by how often you go to services, however but by prayer and other acts of goodness. I try to be a good person, and give to others and in that way I share my faith and myself. I also look to God often as having a bigger plan for me. When I get frustrated with how things are going I often ask why? This in high school definitely led me to have a bit of a faith crisis, but I have learned that if we only get good things then we don’t appreciate them, it takes time of struggle and hardship to find out who we are as people and also how strong we are.
Needless to say I do believe in God, but also I believe that he is in every major religion. In this way, I do not rate one religion higher than another. I have read the Bible and the Koran so that I can gain an understanding of other religions, and appreciate them. I find Judaism and Islam fascinating, especially the culture of the different religions, which is so different from my own. Despite these differences, I would never treat a person differently because they see God from a different point of view.
As long as we all believe in something what does it matter what that greater power’s name is? Something I have grappled with for awhile is conversion… for example would I convert to another religion if my future husband asked me too? I know this is a struggle for many couples, and back in college it is something I thought about a lot. I can honestly say that I love being a Catholic, and all of the things that it entails, but I would have to weigh all of the pro’s and cons, and see what aspects of my religion that I could keep i.e Christmas.. because I would want to raise my children within a faith, and I wouldn’t want them to feel pulled in a certain way! Maybe a fusion religion? Chrismukkah anyone? I don’t know and fortunately right now it is not something even remotely in my immediate future!
The take home here is that I am highly tolerant and from a scientific and sociological perspectve I appreciate all of the religions for what they have to offer!

Ok now that I have that out of the way! Here is my lunch story!!! Today I was hungry after class so instead of going straight to the pool as was my original plan, I went home and made a pizzadilla!!!
Huh? What is a pizzadilla? It is a flatbread pita that has mozzarella cheese, pepperoni, and basil on it, and grilled like a quesadilla!!!
OMG soo good!!!!!!! I loved this lunch! served with Baby Peppers (SO FREAKIN CUTE) and 1… ok 5 lil Babies from last night

Yes… delicious! and I just love these baby peppers, they are so cute and portable!

Also I know Im so attractive/ not toolish at all when I make those faces/refuse to put on makeup for class. it’s fine! But it is a rainy day/lazy day which means sweats and doing work/ eating lunch in my room and being a bum!

Ok off to run errands and then go play with Baby H!

I Love Dinner

It has been decided, I love breakfast and lunch, but my favorite meal is definitely dinner!! Maybe it is because I am the most creative at dinner… unless it is a weekend and I have more time to make fun breakfasts!!

But tonights dinner definitely made me realize that I just love it!!! And yes I know I said stir-fry… but this didn’t happen  because I saw a sweet potato in the g-store today.. and thought… mmmmm I haven’t had a baked potato in awhile… that sounds delicious!!!!

And so my dinner consisted of stir-fried tofu, corn, green beans, peas, and carrots, and of course fresh orange peppers.. my fave, and the sweet potato!

THIS WAS SO GOOD! simple, but full of different tastes, and lots of healthy veggies! I love simple dinners that are bursting with flavor!

For dessert? Watermelon and homemade almond joy babies!!!

Never heard of a baby? Go to Katie’s blog to find out!!! I have been inspired by her and on the quest for healthy desserts and these really are the perfect things!!

In the food processor?

2 packs chocolate almond butter

10 dates

1/4 c unsweetened coconut

1 tsp agave nectar

handful of chocolate chips

1/4 c oatmeal

Throw it all in and blend it together until it sticks together!! It will form a massive ball/awkward formation in the processor! Then make as many babies as you want depending on the size you want (or how much “dough” you eat)

Chill in the fridge and then go to town!!!!!

Also… Glee… gets me every time…. this one was so emotional! I love it… can’t wait till next weeks NYC episode!!!!!!!

Ok, now back to work, I have had multiple baby stress attacks today abut the work I have to do for next week (the last week of class!) and yea… bahhhh! I am the kind of person who needs to have everything done a few days in advanced so I can go back to it with a fresh mind before it is due!  I have never been a last minute worker.. too stressful!

Also, I just got an email, and I was the top fundraiser for The Children’s hospital for my Half!!!! I love fundraising for a good cause! Unfortunately it wasn’t completely selfless because I won a free pair of Nike tennis shoes!!!! yay!!!

Do you ever win things in fundraisers/raffles/ auctions? I usually never do!!

It has begun…. too early… but it happened

what is that you ask? well I am a creature of habit, and there are things I do every summer, like eat wayy more fresh  fruit and veggies, reread Harry Potter, aaannndddd OC marathons!!!!!! Yes I rewatch the entire series of the OC….

This started summer before my senior year of college when I was living with my friends Brea and Nicole

I always forget about this show and how ridiculous it is! Seriously every episode is insane!!! It is only gonna be able to be watched at night…. AFTER my work is done! 11 more days of school!!!! YEA BUDDY!

Also… did anyone else watch the season finale of GG???? BAHHHHHHH one this Blair and Chuck saga is too much for me… and yet I was sad when she picked Louis!!! oh well…. this show always changes…

Ok its bed time.. I know thats it… you tell us about TV… isn’t this a FOOD blog? Well yes yes it is, but today I ate salad, leftover pizza, and for dinner? A smoothie and peanut butter on flat bread pita! yum yum yum… tommorow I promise I will have REAL food and a recipe for you guys… A STIR FRY recipe which is actually my favorite thing in the whole wide world!

Also…. after massage, hot tub, and Hot Power Fusion Yoga this morning…. very little soreness! BOO YAH half marathon… in yo face!

Half, Half, Baby COME ON!!!!

I DID ITTT!!!!!!!!!!!!!!!

Two hours and Thirteen minutes later… ok well actually many more hours that that… because my race actually ended at 8:13.. hahah

OMG it was sooooo….. FUN! I had the best time! Yes I ran by myself, but that actually was the best part because I could keep my own pace, and.. . DANCE… which I did, a lot! I made a bomb play list that I will share latas, and purposely made my best faster paced songs towards the end! This resulted in a total surge of energy from 5-8 and then my toe started hurting

“Oh this is dumb, and I’m cold”

“MULLAN STFU and FOCUS on the music.. remember 10 minutes ago when you were having so much fun”

“Oh yea… that was nice”

Cue Forever by Drake.. and I took off again toe completely forgotten! Ps didja like my inner dialogue? That legit happens in my head… positive self talk much?

But really, my first 5 miles were a blur, I felt light and it was easy! Hit that rough patch, but my last couple of miles flew by too! I can actually saw I ran with a smile (or silly face) most of the time!!! Best part? I ran into friends who had run it at the end!!! I didn’t take pics.. I should have I know but I didn’t want to be THAT girl.. so I wasn’t.. that and at the end I was SO cold the pictures would have been blurry!

Yes it was drizzly and a cool 36 degrees for my race.. that started at 6 am… ideal? No, but I actually like running in cooler, overcast weather better anyways! I didn’t have any spectators, but that is because I didn’t want anyone to have to come sooo early and the cold! Maybe if it had been an hour or two later!… and sunny

After my race, the cold got to me and I had to leave my friends and get in ma car! Of course… I parked on the race cars… but I wasn’t the only one so I felt less awkward following the other cars! I drove straight to my Aunt Alice’s who had so kindly offered to give me a post race massage!!! She is a PT, and she could be a massage therapist it was awesome, and I learned where I was carrying the most tension and why I have problems with ab work aka why I am not seeing the results I want!! So handy dandy to have a PT in the family!!

Now I am laying in my bed… watching TANGLED… for the 1234567890 time, and probably going to take a nap… as soon as my pork tenderloin is done… because that is my food of choice after a half (minus the minestrone I had at Aunt Al’s) before I have dinner of…. PIZZZAAAAA!!!!! yes I am so excited!

WAHH I’m still on a runner’s high! I feel so accomplished and just so proud that I actually did it! Never did I think I would be a runner like this and now I am!!!!!

Morning GLORY

Holy Michelin Man have I got a recipe for you!!!

So I have always wanted to make cinnamon rolls… because I LOVE them.. I mean really who wouldn’t… cinnamon, frosting, bread, basically all the components of a GREAT food… and it’s for breakfast… which is my favorite meal… However, yeast scares me.. I don’t like it very much and well I’m not a patient baker, which is why I hate chilling cookie dough for 24 hours, or really any action that prolongs the inevitable  of popping a hot fresh from the oven treat directly into ma mouth.. yeast is the WORST for this because everything with yeast takes at least an hour to rise! This is where Kristin comes in.. who seriously is like my new hero in the kitchen…. I basically subsist off her recipes now… yea I’m cool and need a life its FINE

Anywhoodles NO YEAST CINNAMON ROLLS…. ARE YOU EVEN KIDDING ME! I took one look at the recipe last night, ran to the g-store as soon as I could pull myself out of bed… legit still in my PJ’s… well sweats… ew yea I’m gross oh well… and now my apartment smells like Heaven…. seriously I can’t wait till Liza and the BF wake up to be my taste testers!!!!

I made some changes to the recipe… basically I just used white whole wheat flour…. and vegan butter… you know to trick myself into thinking its healthy!

Easy Cinnamon Rolls

makes 16 rolls, adapted from Iowagirleats and InJenniesKitchen


3/4 cup packed (136 grams) dark brown sugar

1/2 cup (102 grams) granulated sugar
1 tablespoon (12 grams) cinnamon
1/2 teaspoon (4 grams) coarse sea salt
2 tablespoons (1 ounce) butter, melted
2 1/2 cups (12.5 ounces) flour, plus more for rolling out dough
1/4 cup (1.5 ounces) granulated sugar
1 1/2 teaspoons (8 grams) baking powder
1/2 teaspoon 4 grams) baking soda
1/2 teaspoon (4 grams) coarse sea salt
1 cup (225 ml) buttermilk
7 tablespoons (3.5 ounces) butter, melted
2 ounces cream cheese, softened
3 tablespoons buttermilk
2/3 cup (79 grams) Confectioner’s sugar
Preheat oven to 425ºF.  Combine filling ingredients in a small bowl and stir with a fork until blended; set aside.To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.

In a separate small bowl, whisk together the buttermilk and 4 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it just comes together.. do not over mix. Knead a few times until it becomes smooth, then divide into two equal portions.

On a lightly floured surface, gently roll or press each ball of dough into a rectangle, or oblong shape like mine were! Spread half the filling on each piece of dough before gently rolling the dough into a log.  Cut the log into 8 even pieces, and put into greased pan!


It will be the perfect energy for my day! Race expo, church with my g-ma, and then of course stuffing my face with more carbs aka PASTA.. so excited about this… and going to bed at 9. Yes I know… what a day.. oh and maybe some work… if I can get around to it hahaha jk
