Holy Michelin Man have I got a recipe for you!!!

So I have always wanted to make cinnamon rolls… because I LOVE them.. I mean really who wouldn’t… cinnamon, frosting, bread, basically all the components of a GREAT food… and it’s for breakfast… which is my favorite meal… However, yeast scares me.. I don’t like it very much and well I’m not a patient baker, which is why I hate chilling cookie dough for 24 hours, or really any action that prolongs the inevitable  of popping a hot fresh from the oven treat directly into ma mouth.. yeast is the WORST for this because everything with yeast takes at least an hour to rise! This is where Kristin comes in.. who seriously is like my new hero in the kitchen…. I basically subsist off her recipes now… yea I’m cool and need a life its FINE

Anywhoodles NO YEAST CINNAMON ROLLS…. ARE YOU EVEN KIDDING ME! I took one look at the recipe last night, ran to the g-store as soon as I could pull myself out of bed… legit still in my PJ’s… well sweats… ew yea I’m gross oh well… and now my apartment smells like Heaven…. seriously I can’t wait till Liza and the BF wake up to be my taste testers!!!!

I made some changes to the recipe… basically I just used white whole wheat flour…. and vegan butter… you know to trick myself into thinking its healthy!

Easy Cinnamon Rolls

makes 16 rolls, adapted from Iowagirleats and InJenniesKitchen


3/4 cup packed (136 grams) dark brown sugar

1/2 cup (102 grams) granulated sugar
1 tablespoon (12 grams) cinnamon
1/2 teaspoon (4 grams) coarse sea salt
2 tablespoons (1 ounce) butter, melted
2 1/2 cups (12.5 ounces) flour, plus more for rolling out dough
1/4 cup (1.5 ounces) granulated sugar
1 1/2 teaspoons (8 grams) baking powder
1/2 teaspoon 4 grams) baking soda
1/2 teaspoon (4 grams) coarse sea salt
1 cup (225 ml) buttermilk
7 tablespoons (3.5 ounces) butter, melted
2 ounces cream cheese, softened
3 tablespoons buttermilk
2/3 cup (79 grams) Confectioner’s sugar
Preheat oven to 425ºF.  Combine filling ingredients in a small bowl and stir with a fork until blended; set aside.To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.

In a separate small bowl, whisk together the buttermilk and 4 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it just comes together.. do not over mix. Knead a few times until it becomes smooth, then divide into two equal portions.

On a lightly floured surface, gently roll or press each ball of dough into a rectangle, or oblong shape like mine were! Spread half the filling on each piece of dough before gently rolling the dough into a log.  Cut the log into 8 even pieces, and put into greased pan!


It will be the perfect energy for my day! Race expo, church with my g-ma, and then of course stuffing my face with more carbs aka PASTA.. so excited about this… and going to bed at 9. Yes I know… what a day.. oh and maybe some work… if I can get around to it hahaha jk
