Fun fact I haven’t fallen asleep before two since Thursday…. I know… why? Well I go out or hang out late watching movies, or pick friends up at the airport late haha… but tonight.. I am home alone with no plans of changing that I can go to sleep when I want… aka like 10 pm
Also Pretty Little Liars is back…. and I love it! I got hooked because Liza watches it! And now here I am on my couch watching it alone!!!
Today was day 2 of Paleo! I did good today.. way better than yesterday! I did bomb all day.. I even went to the movies and didn’t have my usual popcorn… until I got home! My friend and I decided to watch Hall Pass, and he wanted popcorn.. so stove top popcorn it was… and then he wanted brownies… so of course completely normal I whip up peanut butter brownie cupcakes… and ate a few bites… SOOOOO GOOOOOD! I didn’t take pictures of dinner or my late night treats… I’m sorry!
But the brownies…. they stole the show! So even though I can’t share pictures I can share the recipe!
Amazing Brownies from My Baking Addiction
2/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
veg cooking spray
2 ounces unsweetened chocolate
4 ounces bittersweet or semisweet chocolate
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
1 1/4 cups sugar
2 teaspoons vanilla extract
3 large eggs (I only used two.. because I only had 2)
1/2 c peanut butter
Adjust oven rack to lower-middle position and preheat oven to 325 degrees.
Whisk flour, salt and baking powder in a small bowl; set aside. Spray an 8-inch baking pan with cooking spray. Fit a sheet of foil in pan and up two sides, so you can use it as a handle to pull cooked brownies from pan (I used parchment paper). Spray sheet with cooking spray.
Melt chocolates and butter in a medium bowl over a pan of simmering water. Remove from heat; whisk in sugar and vanilla. Whisk in eggs, one at a time, fully incorporating each one before adding the next. Continue to whisk until mixture is completely smooth and glossy. Add dry ingredients, whisk until just incorporated. Stir in nuts, if using.
Pour batter into cupcake tins. Fill half way then add a drop of peanut butter. Once there is peanut butter in each tin fil the rest of the tin with the remaining batter! Bake for 30-35 minutes
But dinner was bomb last night too! I made BBQ Shrimp, Salmon and Brats (don’t worry I wasn’t alone) with macaroni (not for me) broccoli and coleslaw (made with vinegar and olive oil and a bit of stevia!) sooo goood!
Today I had a fruit bowl for breakfast, followed by a fresh delicious lunch!!!
Grilled Pork Chops with left over coleslaw beefed up with peppers and green beans!
Yea… so good! After an afternoon of laying by the pool/ consulting/ swimming for 45 minutes/ more consulting I came home STARVING! Too hungry to wait for anything to cook! Sooo I went to Chipotle!! I got steak, salsa, guacamole and lettuce… with an extra side of pico de gallo… for $4.35!!!! OMG!!! Thank you Paleo.. you are actually saving me money!
On my last note… I found a new blog that I love today. Confessions from a Cookbook Queen… OMG talk about food porn and recipes where I basically want to make each one… right now… and stuff them all in my mouth! Kristan is so cute and funny with a brilliant mind for desserts!!! Go on this blog now… just maybe not when you are hungry… or not eatings sweets… it is a tad painful!
