Oh hi there! After an 11 day absence I am back, and this time I promise to stop leaving you all for such a long time! In my defense.. I didn’t have internet at the hotel I have been at.. and I am still not to the point of blogging on my phone… it just doesn’t work for me! These last two weeks have been JAM PACKED… one of the reasons why? Oh yes I have been in HAWAII since last Sunday…. yea I hve been living the life at a conference for the past week… and kind of being a beach bum…life is hard I know

The conference I attended was for the Association of Applied Sports Psychology and I learned a lot from the lectures and networking that I did there! In fact some of what I learned will be popping up on the blog shortly!! There will be some fun new changes to EDBS!

Despite the fact that I was in tropical paradise, I was in a funk all week. I couldn’t shake my mood of uneasiness and disconnectedness that I was feeling towards my classmates, the conference and other things. Why? I really don’t know, but lately I have been on the go constantly and I  think all of this caught up with me finally and erupted in my mind this week. I love sports psych and I ADORE my friends.. they are my life and I would be nothingw ith out them…

but I just felt like somehow I was not in the right place. As you may or may not know I am pursuing a PhD in Counseling Psych, or hoping too anyways, and I think that this new drive to go for pure counseling is drawing me away from sports psych. While I want to work with athletes, I want to do it in a clinical setting, one that is more put together than AASP and the world of Sports Psych, which is still finding it’s way in the world of Psychology. Anyways hopefully now that I am almost back in Denver I will go back to normal sunshiney me and stop being such a lame-o! I really hate having these feelings of isolation and self-doubt which cause me then to further retreat inside myself.. which exacerbates the problem… silly me!

Ok ANYWAYS sorry for that emo tangent… just had to get it out there… not all was Dark and Twisty however… I had some wonderful times with my friends exploring the island and of course relaxing by the pool and the beach!! I even tried Stand Up Paddle Boarding…. and two days later I am still sore but man was it fun and a great work out!! Plus the views of Oahu from my board out on the ocean… pretty freaking amazing!

I think the pictures say it all! It was a good week overall, but I am definitely ready to get home and see these ridiculous people who I have really missed!

OK off to go meet my best little bro (sorry kevkev) who is driving up to LAX from the OC to entertain me during my super long lay over!! yay for family time!!! More to come later!!!

Pushing Yourself With Exercise

Hello from my couch where I am pretty sure my body has fused into the cushions because it is so tired! Have I ever told you that my couch is basically the most comfortable couch ever? Well it is… which is not always a good thing!

Today’s workout(s) got me thinking about my history witch exercise and all the different phases I have gone through.

Until I was about 17 I never even went into the gym, because I always swam, and when I was younger played other sports that always kept me active. And I swam so much that it didn’t matter if I did anything else. However the summer between my sophomore and junior year I put on about 10 pounds which is a lot in high school and realized I needed to amp up my working out both to get in better shape and become a stronger swimmer! I started using cardio machines and weights when I wasn’t swimming to balance out cardio and strength which I had never really done before. I found that season was my strongest swim season yet and was further encouraged to work out beyond the pool. That summer before my senior year I really started running and joined the XC team. It was hard, I am not a natural runner, and I am pretty sure I never ran more than five miles but it made me really push myself… even if I was not good (I finished 2nd to last a lot) But even though I was slow… I always finished with a smile!

Once I got to college I had to get used to the lack of a structured sport environment for the first time in my life. I went a little too hard at the beginning and would work out until I almost passed out most days. I lost close to 10 lbs my first two months in college, and probably would have continued only my body put a kibbosh on that and I broke my foot.

Ever since then I have had a much healthier attitude about working out and how much my body can handle! I became a spin instructor senior uear and loved helping my friends get into a form of exercise I love so much! If I have time I will sometimes do two a day especially in the summer, but I don’t over do it! Mostly it will be a cardio workout and then a strength class or workout!

My running really took off when I moved here and learned how much I really do enjoy running.. most days! After I ran my first half marathon things really took off because I was so proud that I had reached an accomplishment that five years ago I would have thought impossible!

Now my second half is in less than a month and I finally am getting up there in mileage! Today I did a ten mile run which was great! Seriously I have not run as much this time as I did for the first one, but this ten miler was easier than before! It may have been my mid run fuel… of swedish fish…. hey it did the trick… I rocked it!  After my ten miler I came home and made teh best egg sandwich potentially ever…

Pesto Muenster Cheese Egg Sandwich

I broiled a sandwich thin and then added two sliced of muenster cheese until they were bubbly! I topped the slice of sandwich thin without cheese with pesto and then added my egg! OMGGGGGGG the flavors killed me… and I wanted another one right away… but I refrained hahaha

I also ate a veggie sausage pattie on the side for extra protein and a peach for some fruity goodness!

After my post run fuel digested it was off to meet my freind Taryn for a spin class! My first spin class at DU! It was a good class and the instructor was really cute.. she had a good range of music including some hist from 1993… the year the freshman this year were born.. I felt old

After abs and stretching at the end of class I jumped into the pool for 20 minutes of cool down swimming…. needless to say today I may have overdone it just a little bit considering my body feels similar to the way it felt after my first half… I will be taking it easy with a yoga class tomorrow.. if I can move…. After my triathalon workoutI enjoyed a box of chocolate milk.. I got this from my favorite running guru.. and a big bowl of cereal!

Now I am off to meet with not one but TWO clients!!! I am so legit 🙂 See ya for dinnah lovers!

Pesto Rice!

Have I mentioned I love Pesto? maybe a lot of times? Well I do! Tonight I has hit with a pesto craving on my drive home and after Yoga Sculpt I hit the grocery store to make Almond Pesto!!!

OMG if you haven’t subbed other nuts for pine nuts you must do it! The taste is so much better and hey almonds are healthy right?

I mixed up my pesto ingredients, basil, olive oil, parmesan, and almonds in my kitchenaid food processor! Once it was nice and blended I mixed it into freshly cooked rice, and grilled chicken with spinach and peppers! This was so yummy and exactly the feel good meal I needed after a long day of class!

Lets go back to Yoga Sculpt shall we? This class was fantastic! I was a bit skeptical about it because I had not taken this teacher before and I am usually picky about whose class I go to.. but wow this definitely blew me away! She was a great teacher and really challenged us! We spent a good 10 minutes on core and I was dying by the end! I will definitely be feeling it tomorrow!

Now I am off to relax and decompress after today!

Books I Love: ESPN: Those Guys Have All The Fun

GOOODDD MORNING!!!!!

I am up and at em nice and early this morning, but sadly still without time to workout… I will have to figure out Tuesday and Thursday mornings better from here on out! It helps that my class is at 9 instead of 8 like I thought!

This morning I decided to use my extra hour to be productive and print things out and eat breakfast instead of heading to the gym since I had already planned on swimming later tonight!

My new obsession? Cereal! I go through phases with cereal, sometimes I crave it constantly and sometimes  I can’t stand it so I am enjoying this little kick I am on! My new favorite is Three Sisters Graham Crackers cereal… sooo yummy! I started off my morning with a big bowl of that with strawberries on the side… I am not a fruit in my cereal kind of person, I would rather eat it on it’s own!

In other news, I read a lot but rarely do I post about it, so that is about to change! From now on I will start reviewing my books on the bloggy just in case any of you want a new book to read! Today’s selection the ESPN book: Those Guys Have All The Fun! You may be thinking.. um no that sounds bad… but it was SOO GOOOD!

It follows ESPN from it’s inception and every step on the surprisingly rocky path that it faced in becoming the major power that it is now! It reads like a conversation between the people that were interviewed, which comprise of past and present employees, people from the other networks, athletes, commissioners, etc! It was funny, heart wrenching, and eye opening all at the same time and really gives you an insiders view of cable television and what it is like to work within television! It also once again brings home the importance of sport in our culture and how much broadcasting sports changed both the fabric of society and sports themselves. Things like the X Games for example were started by ESPN, and NASCAR became as big as it is because ESPN was the only network who devoted hours of time to their “sport” (I don’t know if that’s a good thing or not). If you enjoy sports and watching ESPN you should definitely check this book out, or get it for your significant other, it is a great read! Plus you can impress people with your sports knowledge that you quote from it 😉

So Long Sweet Summer


Today was the very first day of class which means summer vacation is officially over 😦

This has been one of the best summers of my life and I am bummed to see it end! Highlights of  this summer include:

These are just a few of the great things that happened this summer! I have loved being able to travel for the first time in two summers (I nannied in the Hamptons for two consecutive summers) and getting to know Collen and Twink better, and of course being able to share in two beautiful unforgettable weddings! I learned a lot about myself this summer as well, such as how to let people in and take a chance even if it doesn’t always turn out perfect!

However I am excited for the new year and all the new adventures that await! I have one more year left in Denver and in case it is my last I want to take advantage of every moment! That means exploring, hiking, skiing, and just enjoying my friends and family here!  It will also be a busy year, with PhD apps and my master’s project! Hopefully it won’t be too overwhelming!!

It was a good first day of class that started off with a stellar yoga class, followed by hw, my actual class for two hours and then a great tempo run that had me doing 3 miles in under 25 minutes! Best way to start the school year is definitely with two sweaty and fulfilling workouts!

To celebrate the  beginning of school I made myself a hearty, healthy dinner filled with salad, grilled chicken and mashed sweet potatoes! Ryan came over and enjoyed a massive plate of nachos while I ate my meal, I may have snuck one or two 😉

Now we are watching the Broncos game!

I also made muffins for our first long day tomorrow – 8am-3:50 eeesh… Pumpkin Oatmeal Muffins from PBFingers!!! Julie is a genius and the muffins are awesome! My taste testers here approve! Check out her blog for the recipe and you will not be disappointed!!!

Last Weekend of Freedom

Happy Monday everbody!

Today is a big day but before I get into that… I wanna talk about this weekend!

This was our first weekend all back together before classes started and it was great! On Friday we kicked the weekend off with a BBQ at Ted’s! I came prepared armed with all of this

We grilled and caught up before it was time to start the real fun of the evening…. Beer Games! We had First Year vs Second Year flip cup… and for the most part the Second Years dominated!!! I surprised everyone by actually ebing quite good at flip cup.. because I am awful at pong!

  It was a good night full of friendly competition and great food!

Saturday started out strong with the Michigan State game and breakfast with Ryan, Connor and one of their friends Andy! All three of them are big State fans, and it was fun to watch them get so excited about the game!

After leaving the boys, Collen and I went on a bike ride… or well we tried to go on a ride! Tina decided to be a diva drama queen and break halfway into our ride!!! It was a biketastrophe! Thankfully Ted has a bike rack and we were close to his place so he could rescue us and bring us back to my place! We rewarded him with fro yo!

I came home from fro yo heaven in time to get ready and head to Kat and Andrews for our usual marathon of College Game Day! I love college game day. even if I didn’t go to a school with a football team.. it really is my favorite day! We had left over cookies, wings, chips and salsa, and of course beer, well and coffee for me! I never drink coffee but I was exhausted by 5pm on Saturday!

We went from Kat’s to Elana’s new amazing loft to pregame before going out! Elana’s new place is amazing with a sick rooftop that of course we took advantage of! We love rooftops, which was apparent when we spent our night basically the only people on the rooftop of the bar we went to!

Needless to say it was a great weekend spent iwth great people! Yesterday I went on an hour walk with my aunt Alice! It was a beautiful day outside and as usual I love talking to her about everything. She is a PT and so there is a lot of common ground with what she does and what I want to do! Finally I was able to relax at home and watch football while getting all my stuff together for my upcoming classes, and doing some reading!

Also yay the BEARS WON!!!!!

Now I am off to finish getting ready! See you after class!

Cookie Palooza

It is cookie madness in my apartment!! Tomorrow is our BBQ with the new first year at Ted’s so in true tradition I am baking up a storm of cookies and cookie bars!!!

Tonight I have made Oatmeal Chocolate Chip Scotchies, Peanut Butter Oatmeal Chocolate Chip Scotchies, and Oatmeal Raisin cookies… can you tell I love oatmeal cookies?

I used the same base for all of the cookies and split up the batter into three different batches and added in the different toppings!

Vanishing Oatmeal Raisin Cookies

adapted from Quaker Oats

Ingredients

  • 1/2  cup (1 stick) plus 6 tablespoons butter, softened
  • 3/4  cup firmly packed brown sugar
  • 1/2  cup granulated sugar
  • 2  eggs
  • 1  teaspoon vanilla
  • 1-1/2  cups all-purpose flour
  • 1  teaspoon baking soda
  • 1  teaspoon ground cinnamon
  • 1/2  teaspoon salt (optional)
  • 3  cups Quaker® Oats (quick or old fashioned, uncooked)
  • 1  cup raisins
  • If not using raisins, use chips of choice.. I used semi sweet chocolate chips and butterscotch chips
  • I also used 2 tsblspn of peanut butter in one batch

Preparation

Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. *Or add any other toppings you use such as chips or peanut butter

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

I sneaked a bite of one of the oatmeal raisin cookies, soft and chewy… soooo yummy! My friend Ian requested these so I  hope he enjoys this batch! The other two cookies were requested by my friends today after I had brought them on Monday to Ted’s BBQ!

I can’t wait to get started on the bars tomorrow! I am making these smore’s bars again, after they were also requested as a follow up to Monday’s version! I am also using another one of Maria’s recipes… Peanut Butter Chocolate Chip Blondies!!!

In other news I had a delicious salad after a great six mile tempo run! I did each mile sub 9:30 and my last mile was 8:09!!!

In the mix:

Grilled chicken marinated in tomato sauce

Spinach and Romaine Mix

Orange pepper slices

Fresh Mozzarella chunks

mmmmm so delicious!

Ok now that I have made you all hungry I will leave you for the night! I am very sleepy but am too excited for the Roomies return tonight to sleep!!!!!

Orientation and Leftovers!

Why hello there!

This morning was the first part of orientation for the new first years! I cannot even believe I am a second year! Where has the time gone? This year will be full of many things.. like my Master’s Project, Apps for Doc programs, work, and of course living up every moment I can with my friends!

Today, five us went through an ice breaker and team building activities with the first years in order to get them working together and loosened up for the year! In our program we spend A LOT of time together so it is important that everyone work together and respect each other. There are a lot of times when we work together in groups, consult together, do masters projects together, and present in front of one another, and having the support of most if not all is amazing.  It was nice to play a part in helping this new class get to know each other better!

I came home and had a visitor for lunch! My new friend works near me so it is very convenient for lunch breaks! I kept it simple with a bowl of leftovers!!

MMMMM just as good if not better the next day! I had the leftover pasta, mozzarella cheese, and some turkey thrown on top for protein!

I love left overs for lunch.. and lunch dates 😉

Winner Winner Chicken Dinner!

Goood Morning!!

I hope all of you are having a great morning! Today is the first day of orientaion for the incoming class in my grad program so instead of getting up for an am workout, I am up getting ready to go meet them! I can’t believe my second year is about to start but I have pretty good thoughts about the upcoming school year because so far, everything is getting pretty exciting around here in a good way!

Would you like to know why?

Last night I had a date! I know… wow that never happens….but it wasn’t the first one either… it was the second.. or fourth or fifth we aren’t quite sure on that one 🙂

We decided I would make dinner, and since it was a cold rainy day here in Denver yesterday and I wasn’t quite sure of his tastes I stuck with the basics and made chicken parm which topped a pasta tossed with tomatoes, garlic, spinach, and basil! This was definitely a winner dinner and the perfect thing on a dreary day!

The chicken was super easy to make and pretty healthy too!

Easy Chicken Parm

2 chicken breasts pounded down

1 c tomato sauce of your choice (I usually make my own but didn’t have time)

1 ball fresh mozzarella

1/2 c parmesan cheese

Pasta:

Whole Wheat Pasta of your choice (I used fresh penne)

Diced tomatoes (I used canned because I was lazy)

1 c spinach

1/c basil

1 clove garlic

To make sure the chicken is fully cooked and doesn;t take eight years, I grill it on my george foreman first for about 10 minutes. Then I place it in my in individual casserole dishes and layer the sauce than the cheese on there. For a more veggie-fied meal you can make stacks with eggplant and chicken if you like eggplant! Bake at 400 for another 10 minutes and then take out and enjoy the bubbly fresh goodness of the cheese and sauce!

While the chicken is cooking boil water and cook your pasta. When it is done throw it in a large sauce pan with all the other ingredients… cook until spinach is slightly wilted! Place it on your dish and spoon your chicken over it! Anyone you make this for will be impressed because it is soooo good if I do say myself!

Getting in the Groove

Hi again!

I am writing a quickie post before I pass out at the late hour of 8:30… because honestly feels like 10 pm!

ANyways as I have mentioned before or I think I have.. I am training for the Denver Rock N Roll Half that is on October 9t… and the most I have run is today.. when I ran 8 miles! I was so proud of myself but at the same time I feel that 8 miles is not enough! I plan on running a 10er next week but the week after I am in Hawaii and then it will be a week before the race! I have been struggling with this all summer and trying to run in the heat which I am awful at!

Luckily this is my second half however I am not used to feel this unprepared for a race or really anything! Runners out there, how do you get in the groove during less than ideal situations?

In other news I got a bday care package today with Swedish Fish and Dark Chocolate MnMs as well as a few other fun things! Needless to day I ate one of the bags of Swedish Fish throughout the day! They are my downfall… and I did run 8 miles after all…

Not only was I in the running groove but I was in the cleaning groove today! I bleached all my floors and counter tops, vaccumed and finished my laundry! Wooo the rooms comes back in one day and I want it to be so squeaky clean for her!

Ok now I am off to bed! I know I promised Labor day tales and other news but that will have to wait till tomorrow! Also my camera is not with me so I cant share pics from yesterday yet 😦
