First day on the Mountain!

Holla Holla!!!

Soo I was gonna do a Vlog today… however I am pretty sure my baby bro Kev may have punched me in the face if I started videoing myself on the mountain… as it is I wiped out trying to get off the chairlift… yea… SUPER EMBARRASSING… I’m a smooth criminal its fine

Regardless of my wipe out and the steep icy conditions on some runs that made me do pizza like a six year old who is learning how to ski, it was a pretty good first day out on the mountain here in Beaver Creek! I would much prefer more powder as would I am sure everyone here however we must make do with what is there and I will still ski at least a half day every day!

Today I skied with Kev Kev and his good friend Griffin from HS.. they were much better than me however kind of enough to wait for me and entertain me on the lifts hahaha… When we got back from the mountain, we went fora  quick grocery shop in order to get the final ingredients for the Turkey/Beef chili I was making! I followed my usual recipe with the addition of beef as well as ground turkey thigh for my meat eating brothers and dad! I also added a bit of creole seasoning that we had here at the house.. and boy did it add something special!! I may need to pick some up for my next batch at home!! Definitely a winner dinner!

I also wanted to share with you guys a recipe I made last night for Christmas dinner! We went over to some old family friends house here in Beaver Creek, and I brought cookies and Twice Baked Potato casserole that I found on Pinterest! This recipe comes from the blog Six Sisters’ Stuff and was unbelievable! I was actually told it was better than actual twice baked potatoes!

Twice Baked Potato Casserole
Recipe from Sippity Sup
 5 lb russet potatoes
10 slices bacon ( I only used 3 large pieces… it was enough)
8 oz cream cheese
1/2 c unsalted butter, melted
1 c sour cream (we forgot the sour cream so I subbed in Sababa Yogurt Tsatziki dip)
1/4 c chives, minced
2 1/2 c cheddar cheese, grated
2 tsp kosher salt
1/2 tsp pepper
Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside. Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, and crumble into pieces.  Add the cream cheese, butter, and sour cream to the cooked potatoes and mash until combined and smooth. Add the chives, 2 cups cheddar cheese, half the bacon, salt, and pepper. Stir until well combined.Transfer to a buttered 3-quart baking dish. Top with remaining 1/2 cup cheddar cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.

Now I am watching Pirates of The Caribbean with my dad and brothers and drinking Beajoulais Nouveau! Yummy!

Have Yourself a Merry Little Christmas

Greetings From Beaver Creek!

The fan has been here this week and between nannying all day err day and doing fam stuff… Ive been jam packed! Now we are in the mountains ready for a sweet week of skiing and bonding! And these two kids will be joining us as well as various members of the Mullan clan! If anyone else is in the Beaver Creek/Vail area lemme know and lets hang out haha

 Last night we had christmas eve dinner at my Aunts house which was fun! Lots of good food and family!

I made dessert which included a red velvet cake-tastrophe thanks to icing that failed, and three types of cookies!

This morning I made our annual christmas breakfast of Zucchini bread from Jamie, Eggs, Turkey Sausage, Bacon, and Potato Latkes! I have made daily breakfast for the past 4-5 years since I usually get up earlier than everyone else! When I was younger, Kev would come in my room and we would read Calvin and Hobbs until everyone woke up… now he sleeps in and I still don’t!

yummmmmm! After breakfast we opened presents!!! I got a great haul this year including a gorgeous pair of Tory Burch boots, and some new kitchen toys!!!

my parents were impressed by my “grown up” requests… I in fact did not ask for any clothes which is a first for me!

Also fun fact the ppl before us left Corona Light in the fridge! How did they know its my favorite?!?!

ALSO BULLS FTW!!!!!! I love the Chicago Bulls… how can you be a Chcago kid in the 90s and not love them? Now I am hoping Baby Jesus is smiling down on Chicago teams and gives the Bears an unlikely win! That would make this the very best christmas!!

Better Late Than Never!

Special Surprises!

Sooo I started this post on SATURDAY… but I was a little less than functional so it never got past giving it a title… FAIL I know…

anywayss lately I have been full full full of the Christmas spirit!! Maybe it is all the giving and receiving I have done lately!! From the Great Blogger Cookie Swap, to a Blogger Secret Santa I have been able to connect with great new blogger friers and get introduced to new blogs!!!

My secret santa gift? Peppermint Hot Chocolate with the very cutest cups ever!! Thank you secret santa whoever you are!!!

Another super awesome special surprise lately? A BRAND NEW BEAUTIFUL KITCHEN AID MIXER!!!! Yes.. that is right! I got home from a date late Friday night and what is waiting by my door but a huge box! What could this be I imagined as I dragged into my apartment? Ahhh the excitement that occurred once I ripped open the box was monumental! But there was no note.. so it was a mystery gift! I called my parentals.. 3 am Denver time= 10 am London time so it was appropriate! Not from them… hmmmm… Unfortunately I was too tired to further investigate… so the next day it became my FB status in order to hopefully get to the bottom of this mystery! Saturday afternoon after being at the pool all morning I was nappy nappy.. when my beautiful friend Emma called to tell me it was HER!!!! She works for the Nate Berkus show and they had leftovers from a giveaway and she sent one to me!!!! Greatest person ever… literally it is so super beautiful and big and awesome and pretty and professional…. can you tell I am a little obsessed?

So basically I love everyone in my life especially little Emma who made my life that much brighter on Saturday!

After being a lazy sleepy munchkin all day I got up and ran my first long run of my marathon training program!!! 9 miles wooo! It was done at 10:26 which considering I have been running under 9 minutes in my shorter runs was slower than usual however it was still great!

After my run I got ready and joined Kathleen and Andrew and their friends from Atlanta and Auburn who were in town for the weekend as well as the rest of the crew!

yea I was repping the holiday spirit … Barry stole a ribbon from the bar, and we both ended up wearing parts of it… win

Last  Wednesday Twink, Collen, and I also had a cookie swap and wine night! We each made cookies  (I forgot mine oops but I brought the wine!) and made Mulled Wine that I found at World Market! It was so yummy and the perfect winter drin

It was simple just warm the wine in a pot with spices.. we used pre packaged tea bags of mulling spices… If you don’t have mulling spices you can check out a bomb homemade recipe on Alyssa’s blog!

Ok now it is time to watch The Holiday and pass out!! Night Night all!

Great Blogger Cookie Swap: Double Mint Chocolate Chip Cookies

This afternoon I am talking about the Great Blogger Cookie Swap!!!! After seeing the Cookie Swap on Courtney’s blog, I knew right away I wanted to be a part of it and become more active in the blog community!

The cookies I chose to make were Mint Chocolate Chip Cookies!!! These are my favorite cookies to make and I was so excited to share them with Talida, Caitlin, and Sarah!

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

2 cups (12-oz. pkg.)  Nestle Dark Chocolate and Mint Chips

1 package of Andes Mints baking chips

Preheat oven to 375° F. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

These cookies are chewy and soft and full of minty goodness! If you love minty treats add these into your holiday cookie rotation!

Guess who’s back, back again?

Meg is back, tell a friend!!! Oh hello hey hi how ya der? Miss me? I missed all of youuuuu epic epic epic amounts

Why the two week hiatus then? Well first the good ole Mac died 4 days before my final term paper was due… YAY… so that was a bit of a heart attack situation and took a week to fix… so no bloggy then, and thennnnnn Thanksgiving was hectic hectic and two doc apps were due last Thursday, one tomorrow and one next Thursday….. yea… its been real relaxing and fun up in hur… Despite all of that however it has been a beautiful break so far and finally I get to start relaxing now that all my apps are basically done!! WOot WOot WOot

Sooo lets see what we’ve missed here… FRIENDSGIVING… was an epic success… Liza and I hosted it the weekend before Thanksgiving and 17 of our friends came to celebrate and eat too much food and watch Oregon lose to USC… And I made my second TURDUCKEN!!! I actually video-ed it sooooo you get to watch me… making a Turducken.. please hide the excitement… haha

Also I went SKIING!!!!! With T-Bizzle Bear…. it was magical and snowy and wondrous… and I took a huge spill that left me sore for like 4 days… worth it tho! Now I can’t wait to go up more… and for our family ski vacation in like two weeks… can you believe it… Christmas is like two weeks away… holy moly time is flying!

Ohhh and my lil bro came from cali for Thanksgiving!!! It was good bonding time…. we cooked, ran a Turkey Trot… and he got to experience some of the ridiculosity that is Denver!

OMG AND GUESS WHAT THE MOST EXCITING NEWS OF BREAK?!?!?!?!?!?

I AM RUNNING A MARATHON THIS SPRING HKJAGUYFWJHSG

yes… true story I signed up for my first marathon!!

and then I found out it was the day after my brothers college graduation… so now I am going to run a different one! Probably the Rock N Roll DC marathon on St Pattys day (or st Partys day if you will) which would be amahhhhzng as I would get to spend time with this lil one.. ad my cuz who goes to Georgetown law!!!

ANDDDD last cool thing of break so far?!? I got the yummiest yummiest cookies which were gone in ONE day from the Great Blogger cookie swap!! Check out my blog monday to see the recipe I sent to three lovely and amazing and awesome and beautiful bloggers! Thank you Faith for your delicious smookies!! We all loved them. I had to share because I was afraid I would eat the entire dozen by myself… in one sitting.. with hot chocolate…

yess and now I am on my couch being a bum as I have an awful cold and am trying to beat it out by watching Lord of The Rings…. did I ever mention how cool I am? No? Well obvs the coolest… ever… without question
