Soo I was gonna do a Vlog today… however I am pretty sure my baby bro Kev may have punched me in the face if I started videoing myself on the mountain… as it is I wiped out trying to get off the chairlift… yea… SUPER EMBARRASSING… I’m a smooth criminal its fine
Regardless of my wipe out and the steep icy conditions on some runs that made me do pizza like a six year old who is learning how to ski, it was a pretty good first day out on the mountain here in Beaver Creek! I would much prefer more powder as would I am sure everyone here however we must make do with what is there and I will still ski at least a half day every day!
Today I skied with Kev Kev and his good friend Griffin from HS.. they were much better than me however kind of enough to wait for me and entertain me on the lifts hahaha… When we got back from the mountain, we went fora quick grocery shop in order to get the final ingredients for the Turkey/Beef chili I was making! I followed my usual recipe with the addition of beef as well as ground turkey thigh for my meat eating brothers and dad! I also added a bit of creole seasoning that we had here at the house.. and boy did it add something special!! I may need to pick some up for my next batch at home!! Definitely a winner dinner!
I also wanted to share with you guys a recipe I made last night for Christmas dinner! We went over to some old family friends house here in Beaver Creek, and I brought cookies and Twice Baked Potato casserole that I found on Pinterest! This recipe comes from the blog Six Sisters’ Stuff and was unbelievable! I was actually told it was better than actual twice baked potatoes!
Twice Baked Potato Casserole
5 lb russet potatoes
10 slices bacon ( I only used 3 large pieces… it was enough)
8 oz cream cheese
1/2 c unsalted butter, melted
1 c sour cream (we forgot the sour cream so I subbed in Sababa Yogurt Tsatziki dip)
1/4 c chives, minced
2 1/2 c cheddar cheese, grated
2 tsp kosher salt
1/2 tsp pepper
Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside. Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, and crumble into pieces. Add the cream cheese, butter, and sour cream to the cooked potatoes and mash until combined and smooth. Add the chives, 2 cups cheddar cheese, half the bacon, salt, and pepper. Stir until well combined.Transfer to a buttered 3-quart baking dish. Top with remaining 1/2 cup cheddar cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.
