Foodie Pen Pals July


Omg today was awesome….Beach Volleyball is SOOO cool..  and fun.. and amazing.. and I LOVELOVELOVE the Olympics… I was gonna type that post up tonight but Im super tired after meeting up with a friend from HS for a pint at the old pub we used to go to (the runner for my HS friends who read this) and have to get up suupadupa early for SWIMMING tomorrow- Lochte and Phelps GET AT ME… and then Today SHow.. as fun fact it is filmed at noon my time haha.. so look for me… I will be there waving my ‘MERICA scarf and looking too cool for school as per usual

OK now onto the important stuff.. Foodie Pen Pals July… y’all know the drill.. its the best thing ever ever and you should sign up!

does this each month, and it has grown so big and awesome and literal is one of my favorite things about the blog world!

This month my box was from Martha from MLLrungirll! OMG I love her… she sent the cutest box with the best stuff.. so here it is!

So we had yummy gluten free crackers which I love, some yummy snacks like lorna done cookies and teddy grahams, two kind bars which have been great snacks for lying at the pool or just to grab on the go, granola, yan yan chocolate dipping sticks, 2 fruit strips, some NUUN packs and the best part… homemade strawberry jam
This is the best jam I have ever had hands down. I brought it to work because I was afraid I wouldn’t eat it fast enough and it would go bad…we devoured it… and then I wished I had kept it to myself… and so did Whitt who didn’t get to try any haha
so THANK YOU THANK YOU THANK YOU Martha!!!! This was a great month!
Now I am off to get some beauty rest for tomorrow… which is weird because it is still just evening for you all!

Greetings from Heaven

I am at the First Class Lounger currently watching Tandem Diving in the Olympics (um how is this even possible/ probably the hardest thing ever).

I have decided I want to live in the First class lounge… or ya know be supa wealthy so I can always travel this way. One- free open bar… not that I am really taking advantage of it but it was nice to have a cup of Pimms and a glass of wine with dinner! TV showing the Olympics- check, especially when the audience in the lunge is quiet and respectful and so we can watch in peace. Plus the food…. OMG the food



I don’t remember ever having lounge food this good. We travelled business class several times in high school and maybe we just never ate dinner because OMG… this is incredible… so I felt I owed it to all of you to share the incredible tastes that I just enjoyed!

Usually when you think of airport food you think of chains, or expensive snacks that cost more than you want/need to spend but you are s hungry and its an overnight flight so you need dinner. O’Hare International especially is definitely NOT known for it’s food court… McDonalds, a hot dog place and several other fast food chains do not equal health or anything I want sitting in my stomach on an airplane for 7 hours… thanks but no thanks! The exception to this rule is Midway airport where they have a potbelly aka my favorite sandwich

So when I got upgraded thanks to my parents miles, I was overjoyed to reap the benefits of a business class ticket (especially after going on the smallest plane ever from Nashville to Chicago). The dinner options include multiple salad options, such as green salad, arugala salad and more, grilled veggie salad, cannelini bean salad ( i had ends of this SO GOOD) fresh cukes, tomatoes and more, green beans, smashed yukon potatoes, lemon herb chicken, cajun braised beef, wild rice pilaf, crispy salmon, and A MAKE YOUR OWN DUMPLING BAR… um WHAT?? I didn’t take advantage of this… but omg I kind of wish I left room on my plate/stomach because the idea alone is amazing!

Needless to say.. traveling will never be the same!

Opening Ceremonies!

Hulloa!! Greetings from te American Terminal and Nashville international airport where I’m currently awaiting my flight to Chicago- from there I will be en route to LONDON!!!!!!!!!!!!
I meant to blog yesterday however we had friends in town this weekend and it was a hectic Saturday indeed! And by hectic I mean we spent the day at the pool relaxing with a few cold ones, Chuys take out and good music! Post pool day we went to a wedding- and then out with friends!
However that is not what this post is about- this post is about Friday night!
On Friday, Whitt, my roommate Amanda, her bf Ben and me hung out at our place to watch the ceremonies! I have a personal tradition of eating the food of the nation hosting the Olympics the night of the opening ceremonies! This was started by my mom years ago, and being the traditionalist that I am I’m pretty sure I’m the only one who still follows it!
Anyways to honor the host city and my adopted home city- I made Fish and Chips!
I had never fried fish before but it was pretty easy and super delicious!
I marinated tilapia and flounder in a mix of 1 egg and 1/4 a cup of beer. Then I covered the fish in whole wheat flour and panko. I fried the fish for several minutes in peanut oil until it was crispy! The outcome was crispy deliciousness on the outside and creamy fishy goodness on the inside! We paired our fish with frozen steak fries and an assortment of dipping sauces!

I also made an Olympic rings cake that I saw on pinterest! I used funfetti cake and vanilla frosting! Sadly my oven was not working correctly and being me I decided to microwave the cake- this is not ever a good idea…. Microwaves and cakes do not mix! But luckily I’m surrounded by the best people who attempted to eat it and assured me it wasn’t that bad… It was…but it looked good!

We also enjoyed British beverages such as Pimms and Newcastle! I stuck to Pimms which is my favorite summer drink!
I enjoyed the ceremonies… I especially loved the music of the ages section! And of course seeing Becks (david beckham) carry the torch- I love him!

I also saw one of my old teachers who was a volunteer in the games!
All in all it was a great start to the games and I’m already loving the competition thus far!!!

To get you ready for TONIGHT

GOOOD Morning and Happy Opening Ceremonies Day!!!! (yes that is a REAL thing!!)

I am up and at em early this morning to do  my own Olympic workout- biking, elliptical, weights, and possibly getting in ma pool! I am fueling with oatmeal and an Iced Coffee!!!

To keep this post short and sweet because I will be posting later about how I am bringing London to Nashville today!

So to pump you up I will leave you this video put together by the USA Swim Team- these swimmers/athletes are awesome! And as a sports psych consultant this exactly the kind of thing elite athletes should be doing- having fun before the big event!

The Countdown begins and lots of tangents

The Opening Ceremonies start in a little over 24 hours, and in just under 96 hours- I will be in LONDON fulfilling my life long dream of going to the Olympics. I will actually be a better blogger than I have in weeks/months and share all the action with you!

This week was my first official week of work- I am nannying full-time but there may be another exciting job development coming up that I will share with you guys as soon as it is solidified! Today while I was nannying we watched the Today show and I got SOSO excited as soon as  saw the cast by the the Tower Bridge with its hanging Olympic rings!!!!!! It was marred slightly by my distaste towards Savannah Guthrie as I am definitely NOT a fan of her but oh well..

Anywhodles I have been eating deliciously this week due to both and  old favorite and two new favorites!

Old Favorite? Zucchini noodles! Why I haven’t been living off of these all summer is a mystery to me… seriously I forgot how much I love these/how easy they are to make! I whipped some up Tuesday night and had them with a little bit of arrabiata sauce and beef kabobs, and yesterday as a late lunch with pesto, shrimp and tomatoes! I also made some today for my bosses- I hope they enjoy them!

My two new favorites are Ezekiel bread- OMG how am I just trying this now? Gluten free, chock full of goodness and protein, and only 80 calories a slice that is so delicious on toast with some avocado, turkey and an egg (aka my lunch today) This bread certainly makes eating clean and feeling full fun and easy!

Favorite number two is Iced coffee made with Vanilla Biscotti folders K cups in my new Keurig one cup! Perfect for my early mornings!

I also have a favorite new toy…. My new Bike:Penny!!!!!!!!

Last Saturday Whitt and I went bike shopping as we decided the time was ripe for us to get bikes! Penny is a Schwinn trail way bike and she is pretty and fun to ride! Of course I had to get a matching helmet because well I match everything… its normal… so if you live in Nashville and want to come play with me and go on a fun ride…. lets do it

Ok now that this post is completely incoherent and rambling…. and I have recovered from my day enough to go to the gym I am going to leave you!

Quinoa Mac N Cheese

Hello! Hope Friday is going well

Lately I have been really into quinoa, mostly because I finally figured out how to make, and it wasn’t as scary as I thought. Also because it is so delicious and works well with basically everything. And as I am trying to eat cleaner quinoa fits the bill pretty well. So when perusing Pinterest during a Tudor’s marathon, I found a recipe that included both quinoa and cheese… two of my favorite things… well I pretty much immediately went to the grocery store and got to work.Quinoa Mac n Cheese… omg… this was awesome… even better when I added some pesto into it as I am obsessed with pesto and could eat it on everything. But this recipe is easy, and relatively guilt free. The recipe I used also called for the addition of broccoli or other veggies- I was going to add tomatoes.. but threw them in my salad instead.

Quinoa Mac N Cheese

from Around the Table

1 1/2 cups quinoa, rinsed and drained

Veggies of your choice (optional)

good pinch of salt

a few grinds of seasoning salt (I used garlic salt)

2 cloves garlic, minced (only added one)

2 large eggs

1 cup soy milk or non-fat milk ( I only had vanilla soy milk so I used non-fat milk)

1 1/2 cups grated Cheddar cheese, more for sprinkling

Optional- Crushed Red Pepper, Panko Bread crumbs for topping

Toppings (optional)- salsa, hot sauce, sour cream, scallions, pesto

Lightly saute any veggies you would like in this dish. Cook quinoa to packaged instructions until fully cooked. (About 15 minutes) Preheat oven to 350 F. Coat 13×9 inch dish( or 8 individual ramekins) with cooking spray.Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt.  Transfer to prepared baking dish and if using Panko Crumbs or Bread crumbs add now and bake 30-35 mins, until bread crumbs are browned.
This dish was delicious and I had left overs for a few days which was a-okay with me! If you are a fan of quinoa or mac n cheese- or both- I highly suggest making this!
Also to leave on an even higher note- this video is hilarious… especially if you are a fan of star wars… and call me maybe

The Dark Knight

Let me begin this post on a somber note. Last night at 12:30  a 24yr old man went into a midnight showing of The Dark Knight and started shooting. As of right  now 50 people were injured and 12 people have been killed. Please keep those involved in this horrible tragedy in Aurora, Colorado in your thoughts and prayers. There is no reason that this happened and it is senseless and horrible,hopefully there will be no further casualties.

I saw Dark Knight Rises last night at midnight, and for those of you who want to see it, it is extremely powerful, emotional, and good. I didn’t go in expecting much but left amazed. It is long, and the first hour drags but really it is one of the best movies I have seen in awhile.

This is a short post for now as I don’t want to take anything away from what happened, and because I am on my way to the gym. I will pop back later with a recipe.

Holy Sore Muscles and Waffle Hash browns!

Good Morning!!!

Happy Friday everyone! Hope you all have a fun weekend ahead of you! Many exciting things going on here! One- I got a job on Wednesday yay!!! No more funemployment… well I start on the 23rd… so one more week of it! Two I ran last night! Actually ran!!! yay! Ok so we ran about 3 miles, and then walked one mile but it was great! My roommate Nicole got me off the couch and onto the pavement for my first run since the marathon!

Before my night run, I dad an intense yoga session thanks to the Tara Stiles channel on my blu-ray! Needless to say I am sore today but it feels great! 

This morning for breakfast I made an easy peasy recipe I found on Pinterest! Waffle Hashbrowns!

This is so easy- All it is is freezer hash browns, a little bit of oil, salt and pepper and a waffle maker! 

Spread a little oil on the waffle maker and then layer the hash browns on the waffle maker, then top with pepper and salt and cook till crispy and brown!

I topped my waffle hash browns with a sunny side up egg for some extra protein and applesauce for some fruit as I finished all my fresh fruit yesterday!
ok off to get ready for a meeting!
