Hello! Hope Friday is going well
Lately I have been really into quinoa, mostly because I finally figured out how to make, and it wasn’t as scary as I thought. Also because it is so delicious and works well with basically everything. And as I am trying to eat cleaner quinoa fits the bill pretty well. So when perusing Pinterest during a Tudor’s marathon, I found a recipe that included both quinoa and cheese… two of my favorite things… well I pretty much immediately went to the grocery store and got to work.Quinoa Mac n Cheese… omg… this was awesome… even better when I added some pesto into it as I am obsessed with pesto and could eat it on everything. But this recipe is easy, and relatively guilt free. The recipe I used also called for the addition of broccoli or other veggies- I was going to add tomatoes.. but threw them in my salad instead.
Quinoa Mac N Cheese
from Around the Table
1 1/2 cups quinoa, rinsed and drained
Veggies of your choice (optional)
good pinch of salt
a few grinds of seasoning salt (I used garlic salt)
2 cloves garlic, minced (only added one)
2 large eggs
1 cup soy milk or non-fat milk ( I only had vanilla soy milk so I used non-fat milk)
1 1/2 cups grated Cheddar cheese, more for sprinkling
Optional- Crushed Red Pepper, Panko Bread crumbs for topping
Toppings (optional)- salsa, hot sauce, sour cream, scallions, pesto
