Watermelon-Pineapple Smoothie

Hello!!

Where did July go? I know I have been absent- I got my wisdom teeth out and took about two weeks to recover, and then have just been crazy launching my new personal training and wellness site! Go check it out here!

Anyways I have been cooking up a storm recently now that I can finally eat real food again and have much to share!

First off?

Watermelon-Pineapple Smoothie!!!

I got this idea from Julie over at Peanut Butter Fingers awhile ago, and remembered yesterday that we had frozen pineapple in the freezer so I knew what my afternoon snack would be!!!

This is the most refreshing drink I have had in a while- and can imagine it would be an equally delicious cocktail if you added vodka or gin!

Ok heard enough and want the recipe?

1 c freshly cut watermelon

1 c frozen pineapple

A splash of lemon juice

Throw everything into the blender and voila!! perfect for lounging by the pool or a summer bbq!

Week 2 recap and Update

 

Hello all!

Sorry in the lack of posts! Its been busy around here, and sleepy… so sleepy!

Today marks the beginning of week 3 of my Macro eating and changed workout plan! So as a recap I will go over my week 2 with you!

Overall Body weight: 122.6 so basically the same weight scale wise which I am happy with!

Muscle: 56.1 lbs (week one was 51.1 lbs!)

Fat: 20.9 lbs (week one was 28.9)

I also gained like 3 water lbs but thats all right with me!

I can see a small amount of definition already which is awesome, and I am feeling pretty good about my numbers!

My workouts for the week went as followed:

Monday- TRX Legsanity workout with Stair runs after each set… this was a crazy work-out I found on Pinterest and modified! I will post it later!

Tuesday- 40 min spin

Wed: 35 min full body strength day

I did 3 sets of Leg press, Glute press, leg extension, and leg curl to hit my legs and then 3 sets of shoulder press, chest press, bicep curls, Tricep dips and pull ups to target my upper body! I finished with 3 sets of 10 decline abs

Thursday: 30 minute HIIT

Friday: 40 minute spin

Saturday: same workout as Wed

Sunday: rest day!

I am loving the shorter 30-40 min workouts each day! I feel like I am really amping it up and doing the most I can in a shorter amount of time!

Food has been good as well, I am doing a good job of hitting my macros each day and am really starting to pay more attention to what goes in my body! I have some fun recipes to come your way! Lots of new smoothies!

Now to take little snugs on a walk during my break!

A Long Time Coming

Hello Friends!!!

It has been so so long since we last chatted! My abscence over the last year and a half has been something I have gone back and forth on. Every time I went to post- nothing came out- I simply could not type a word of what was going on.

The last two years have taught me more about myself than I ever though possible. I have been tested both in my  work and personal life and have finally come out of it smiling. When I was in the worst of what was going on, even though I wanted to blog and to share- I simply couldn’t! However, I am back in the blogging game now- armed with way more recipes, fitness tips and of course stories from the life of Megan. I hope you can forgive my absence and accept this blog back in your hearts! 

SOOO quick catch up on where I am now:

1. Still living in Nashville and loving it! 

2. Now a personal trainer/spin instructor 

3. still have in my opinion the cutest pup around! (plenty of pictures will be posted dont you worry)

4. Actively searching for the peace and love I crave for myself in the form of self-growth and acceptance

5. Starting a sweet new diet/exercise plan which will be shared on the blog weekly as I progress through it

6. Trying to find my way back to running (more on that later)

7. Cooking up a storm- this past year I attempted so many Pinterest recipes I surprised myself!

8. Still practicing Sport and Performance Psychology through The MindBody Dr. as a performance coach!

SO thats a brief intro to what is going on over here but don’t worry I will delve way more into everything as time rolls along!

2012 in review

Happy New Year!!

I cannot believe it is already 2013! As Yoda and I lay on the couch having a Game of Thrones marathon recovering from last nights festivities, I found myself reflecting on 2012.

2012 was a pretty big year in my life, one that brought a lot of changes and also a lot of self growth!

So here are my top moments of 2012:

1. I completed my first marathon!

2. I graduated with my Masters in Sport and Performance and Psychology!

3. I moved to Nashville, Tennessee in June! I have loved my time here so far, being reunited with old friends like my friend Dave, and having the most fantastic roommate Sarah has been great! I can honestly say I love Nashville and have never regretted my decision! Ive had great visitors as well like my friends Emma and Erica from college and Twink!

4. The London 2012 Olympics!

5. YODA… probably the best part of 2012 is him… there is nothing like a pet to teach true unconditional love and pure entertainment

6. I took over my mentors consulting practice and now have 10 performance enhancement clients!

needless to say 2012 was busy but one of my best years yet! Ups and downs of course but I have learned a lot about myself and what I am capable of and what I really want! 2013 I am definitely ready for you!

My goals for 2013 are simple, I want to prioritize important things more and say no when it is necessary. Lately I have taken a lot on with working 2 jobs and I don’t always say when it is too much.. this is not always good for my sanity or body.. so that is my main goal!

I also want to do more in my community! I have just been nominated to the board of a charity called the Tomorrow Fund and hopefully that will help me get more involved in Nashville!

And of course kick ass in the next Fit Mixer bootcamp and do well in my next half marathon!

Break and cookies!

As of an hour ago I am on break!!! This is my first real grown up Christmas break… and I can honestly say I have never needed a break more… I know last year when I was stressing about doc apps and that pesky thing called my master’s thesis…. nothing on life lately! I now have 10 sport psych consulting clients! I took over my mentors practice in early December when she moved to Denver.. and what started as 5 clients escalated quite quickly but I cannot be more happy about it! Between that, nannying, Yoda, and juggling a social life I have been one busy and tired bumble bee! But I can honestly say I am the happiest I have been in a while… when I am not stuck in traffic or dealing with crying babies!

Needless to say my blog spurt slowed down last week due to needing to take a major breather to get everything done!

I wanted to jump in today tho and share a last minute cookie recipe for those of you who may still need ideas! I got these cookies as a part of last years Great Blogger Cookie Swap, made them several times last holiday season, and made them this week to give to friends/my bosses! These are amazing and always get rave reviews so if you are looking for one more cookie these are the way to go!

2 1/4 cups flour

1 tsp baking soda
2 sticks of unsalted butter softened

1/2 cup packed brown sugar
1/2 cup white sugar

1 (4.2 ounce) package Cookies ‘n Creme pudding mix
2 eggs
1 tsp vanilla extract
2 cups white chocolate chips
15 Oreo cookies, very coarsely chopped
Directions
Preheat oven to 350 degrees.
Using a stand or hand mixer, cream butter and sugars adding the pudding mix when it is all fluffy, then add in the eggs and vanilla
In a separate bowl, combine the flour and baking soda with a whisk, add the flour mixture in to the butter/sugar mix! Stir in chocolate chips and Oreo cookies, and then drop on to cookie sheet in rounded small spoonfuls!
Bake for 10 minutes in preheated oven until cookies tops barely have a touch of brown
Enjoy they are delicious! Now I am off to finish getting ready for our tip to Chicago and Yoda’s first airplane ride!!

NYC Part 1

Happy Wednesday y’all!

Hope you are all having a good morning! I know can you believe I am posting two days in a row? Its a holiday miracle!

This past weekend I went to NYC with my dear sweet Twinkle fairy to see her brother who goes to med school at Mt. Sinai and of course all of my favorite people in NYC! As I mentioned in my last post I am still a bit surprised that I actually made it to NYC because my flight was at 6:30am after my Ugly Sweater Christmas party…. needless to say I woke up at 5 am when the cabbie called me… and trekked to the airport in my ugly sweater outfit…. yes unfortunately I WAS that girl… I would post the picture I took… but no…

After I arrived in NYC I met Twink at our hotel and we went down to Union Square to go to Grey Dogs which is one of my favorite lunch spots in NYC… the atmosphere is awesome and the food is even better! After lunch we walked around for awhile before heading back to the hotel to nap and get ready for her brothers med school formal that night!  On our way to the formal, we stopped up at Rockefeller Plaza to see the tree!Image

I forgot how much I miss NYC at Christmas time! This was always my favorite part of living there, going up to see the tree with friends and have romantic Christmas dates with my big every year! It was nice to be able to share it with Twink!

The formal was at a warehouse in Chelsea and it was quite cool with a great view which you can’t see in pictures because its dark.. but the windows were cool! It was also fun just to get dressed up again and go to a formal like the ones I used to go in college… I have been quite nostalgic lately.. either that or I still kind of live like I am in college… who knows….ImageImage

It was such a fun night with Twink who I haven’t seen since she came to visit me in Nashville over labor day weekend!!!!

The weekend continues with more shenanigans that I will be back later to share!

Ugly Christmas Sweater Party!

Happy Holidays everyone! I have jumped right into the Christmas spirit lately, with actually decorating my apartment this year, going even more all out on my tree (despite SOMEONE who thinks certain ornaments are edible…..) and hosting my very first Ugly Christmas Sweater Party!

For those who have been reading this blog for awhile you may remember that when I lived in Denver my roommate and I had an annual Friendsgiving.. well that didn’t happen this year in Nashville but I still really wanted to throw a holiday party! Of course what would I love more than a chance to dress up in a ridiculous holiday outfit AND dress my puppy up in  a ridiculous holiday outfit without getting completely judged? Yea… there is no other opportunity!

So my roommate Sarah and I hosted our first Ugly Christmas Sweater Party on Thursday! It was super good timing… as I had a 6:30 am flight to NYC the next morning…. that I actually did make! Because I was so excited to be hosting our first real party in Nashville I went a little overboard on holiday treats.. and I hadn’t baked in awhile so it was much needed! I made homemade peppermint bark for the first time which was so easy to make and I will definitely be adding it into my holiday rotation from now on!

Pretzel Crisp Peppermint Bark

1 bag Nestle Semi Sweet and Mint chip bag

1 bag White Chocolate Peppermint covered Pretzel Crisps

1 bag Dark Chocolate Peppermint Pretzel Crisps

line a small baking pan with parchment paper and layer the cops in a single layer on the sheet so the chips are touching. Bake at 350 for 2-3 minutes until chips are shiny. Take out of the oven and immediately swirl the chips together.photo

Once you have swirled the ships, let sit for one minute and then add the crushed pretzel pieces.image

Lift pan up 3 in and then drop it so everything settles in. The refrigerate for an hour before breaking it into pieces!

This was so easy and sooo good! Definitely the perfect addition to a holiday party or gift bag!

There was also Holiday MnM cookies, Puppy chow and Reeses Thumbprint cookies!

And of course… UGLY SWEATERS… and alcohol… just a little of that…

how ridiculous is this tshirt? My friend and I saw it in Target and I died laughing because of my pup obviously and so as a joke her bought it for me for the Ugly Sweater party/life haha. Obviously I put it on for a picture because I am really cool.

It was a great night with friends and the best start to weekend in NYC with all of my favorites that I could ask for!!! It certainly put me in the holiday spirit!

What I am Thankful For

HAPPY THANKSGIVING!!!

I love Thanksgiving, and though this year I am far from my family, as I sit here writing this post, I am excited for the day ahead… and to stuff my face with delicious food.. because obviously that is just as important as being thankful… right?

So here is a list of what I am thankful for this year!

1. My Family… although it didn’t work out that we were all together this year I have the best family in the world that has supported me and each other through everything and I love them so much!!

2. YODA… this dog has brought me so much joy since august! talk about learning what unconditional love is… he was with me when I needed a silent cuddle buddy and I love every minute with the little nugget!

3. FRIENDS…. again I don’t know what I would do without the support of everyone in my life! Thank you for putting up with all my ridiculousness and giving me the best memories.. not to mention being priceless subjects for countless photos….

4. HEALTH… today I was able to run 3 miles and then do a sweaty weight/plyo circuit… and so I am thankful to my body for allowing me to push myself to be healthy and strong!

5. JOB(s) This week I was lucky enough to start my dream job! I am officially the Associate in the Mind Body Doctor, my mentor’s one person company. She has invited me to become her business partner and now I have an office and clients! 6 months after graduation everything I dreamed about happening for 2 years has come through! I am also grateful for my nannying job, the family who is taking me in today and has become my adopted family here in Nashville!

6. NASHVILLE.. I love this city… this move was definitely an adjustment for me but I have been able to active so much in such a little time, and I have never felt so much at home in a place… so this year I am truly thankful for finding that place I can call home!

And finally I am thankful for my readers  and people who read this blog even when I only post once a month! I really have been amassing recipes to get some posts going in the next couple of weeks!

Sorry if that was a tad emo-tastic… I love you all and hope you have a great thanksgiving with your loved ones!!!

Happy Halloween

yup…..that happened…. and we went trick or treating with my nanny family… I win for Halloween

Also I made Funfetti Halloween Cookies… from scratch… heres the recipe!

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 cup butter, softened

1 1/2 cups white sugar

1 egg

1 teaspoon vanilla extract 

Sprinkles

 Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Add in sprinkles- whatever kind you like! Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks. Once cooled frost with frosting of choice! We used store bought Funfetti icing and candy corn!
These would be great for Thanksgiving or Christmas as well… it was a great activity to do with kids too!
